Vegan Bavarian Pretzels

Pretzels are in my top 10 favorite breads to make because they're easy,  they can be substituted in for bread in most any meal, and the vegan version is better then the original! Bavarian soft pretzels are soft and fluffy, with a hard shell and usually the size of your hand or bigger. You probably already have all of the ingredients you need and if you have a half hour, you can make them! 


3c AP flour
1/2c warm water
1/3c sugar
1 package of dry active yeast
2 TBSP softened vegan butter (Earth Balance)
Pinch of salt
3c boiling water
2 TBSP baking soda
2 TBSP melted Vegan butter
1 TBSP rock salt


Preheat your oven to 450F. Combine 1/2c warm water, package of yeast, sugar and allow the mixture to start to bubble. Add softened butter and 1c and mix on low with bread hook. Adding the additional 2c flour and salt, mix with bread hook for 8 minutes on medium, until dough is pliable. Allow to rest for 15 minutes.

seperate your dough into 6 equal parts, roll the small dough ball out with your palms until you have a rope that is 12-15in in length. Form pretzel shape and let rest on baking sheet. Repeat 5 more times. 

Boil 3c water. Remove from heat and add baking soda. Gently place your pretzel into the soda water for 1 minute. Remove and place on baking sheet. Do not dry off the dough. Repeat 5 more times.

Brush the pretzels with melted vegan butter and sprinkle rock salt on top. 

Bake for 10 minutes or until golden brown, rotating the pan mid-way. 

Remove from oven, brush with More melted vegan butter and let cool slightly before serving.
